I am sure we can something that will work for your 5th wheel, but it will not be the Yakima OnRamp Bike Rack for 2 Electric Bikes - 2" Hitches - Frame Mount, part # Y36FR. I just spent some time with the OnRamp on Thursday. Unfortunately, you will not be able to modify the trays to make them fit a 5" fat tire bike. The only way for that bike to fit is for the tires to ride on the trays, not in them. It is something that I would not recommend.

The grease hubs can be converted to oil bath by just switching the hub to an oil bath setup like the part # 8-219-9UC3 that you referenced. To verify that this will fit your spindle you'll need to pull your hub off and measure where the bearings and seal rides. If the dimensions are 1.75 inch and 1.25 inch for the bearing surface and then 2.125 inch where the seal rides then this hub will fit and work well.

I recommend to disconnect the power to the system. Unscrew the Phillips screws from the touch pad and slide the unit off the bracket. You will want to stick with the same style of lug nut, so if you use 90 degree lug nuts, stick with that. The reason is the taper on the 60 degree lug nut is steeper, so there could be fit issues depending on your trailer wheel, as they are designed for specific cones where the lug nut will be.
